Wrap some dough in a cloth and plop it into boiling water...?

Wht is it about Scottish cooking technologies and practices that suggests wrapping what sounds to me like sort of nondescript batter--except for the spices--in cloth and boiling the package for a couple hours will produce dessert??? Inquiring minds want to know even more after watching the video
